Preparation
- Preheat your oven to 180°C (350°F).
- In a small baking dish, combine the mixed cherry tomatoes, finely sliced garlic, and thyme sprigs.
- Drizzle with 3 tablespoons of Babylonstoren Extra Virgin Coratina olive oil and, if using, the balsamic vinegar. Toss to coat evenly.
- Place the tomatoes cut-side up on top of the garlic slices, season with salt and pepper, and roast for about 30 minutes until blistered.
Making the Whipped Feta
- Discard thyme stalks from the roasted mixture and let it cool to room temperature.
- In a food processor or powerful blender, combine the crumbled feta, cream cheese, lemon zest, and 2 tablespoons of olive oil. Blend until smooth and creamy.
Assembly and Serving
- Spread the whipped feta on a serving plate creating a swirl pattern.
- Top with the roasted tomatoes and garlic, including any flavorful olive oil.
- Lightly drizzle with honey and scatter fresh basil on top. Season with sea salt and pepper.
- For the ciabatta, brush slices with olive oil and grill in a pan until golden brown on both sides.
- Serve alongside the whipped feta and tomato mixture.
Notes
Feta Variations: You can use block feta by crumbling it before blending. Herb Substitutions: Use oregano or rosemary instead of thyme for a different flavor profile. Prepare both whipped feta and tomatoes ahead of time; they store well in the fridge. Serve at room temperature for the best experience.
