Preparation
- Preheat your oven to 350℉ (175℃). Prepare your cake tins by rubbing them with a small amount of butter and dusting them with flour, or line the bottom with parchment paper.
- In a large bowl, beat the sugar and butter together until blended, then increase speed to beat until light and fluffy (about 6 to 7 minutes). Scrape the bowl periodically.
- Reduce mixer speed to low and add eggs, buttermilk, coffee, and vanilla. Mix until fully combined.
- Add baking soda, flour, salt, cocoa, and coffee powder, mixing until well combined. Scrape the sides of the bowl and beat on high for an additional 2 minutes.
- Divide the batter evenly between prepared pans. Bake 4" and 6" cakes for 12 to 15 minutes, and the 8" cake for 18 to 20 minutes, checking with a skewer for doneness.
Frosting
- While the cakes are baking, make the frosting by combining all frosting ingredients except milk. Gradually add milk until the desired piping consistency is reached.
Assembly
- Once cakes have cooled slightly, remove from pans and cool completely on a wire rack. Level the tops with a serrated knife.
- Place the 8" cake on a serving plate and frost the top and sides. Position the 6" cake in the center and frost it, then place the 4" cake on top and frost completely.
- Decorate with Maltesers, starting with one on top and working outwards.
- Fill in any bare spots with piped frosting. Get creative with decoration!
Notes
For a more moist cake, consider adding extra buttermilk. Use high-quality cocoa powder for best flavor. Allow cakes to cool completely before frosting to prevent melting. Store any leftovers in an airtight container at room temperature for up to 3 days or refrigerate for about a week. This cake can be frozen for up to 3 months.
