Ingredients

Vegetable Filling
  • 2 tablespoons olive oil for a rich, fragrant base
  • 6 cups vegetables of your choice (sliced) such as bell peppers, mushrooms, onions, and zucchini
  • 2 cloves garlic (chopped) for aromatic flavor
  • 2 teaspoons dried oregano for a taste of the Mediterranean
  • to taste salt & pepper essential seasonings
Quesadilla Components
  • 8 pieces flour tortillas the perfect vessel for fillings
  • 3-4 cups grated mozzarella cheese for melty goodness
  • 1 cup fresh basil leaves (torn) for a fresh touch
Dips
  • as needed guacamole complements the savory quesadillas
  • as needed salsa for a fresh, zesty dip

Method

Cooking the Vegetables
  1. Heat a large frying pan over medium heat. Add olive oil and warm it up. Toss in sliced vegetables and sauté until golden brown and tender, about 5-7 minutes. Add chopped garlic and oregano during the last minute of cooking, stirring until fragrant. Season with salt and pepper, then remove from heat and let cool slightly.
Preparing the Quesadillas
  1. Heat a separate large frying or griddle pan over high heat. Lay one tortilla in the pan, and sprinkle cheese over one half. Follow with a generous amount of sautéed vegetables. Fold the other half over and gently press down.
Crisping Up the Quesadilla
  1. Carefully flip the quesadilla after a few minutes. Allow the other side to crisp up and get golden brown, cooking for about 2-3 minutes.
Serving the Quesadillas
  1. Slice the quesadillas into wedges and serve immediately with fresh guacamole and salsa for dipping.

Notes

For variations, try adding spinach, broccoli, or artichokes to the filling. You can also substitute the cheese with a blend of cheeses such as Monterey Jack or cheddar.
