Ingredients

Main ingredients
  • 1.5-2 lb. boneless skinless chicken breasts Choose medium to large chicken breasts that are tender and juicy.
  • 1/2 cup Italian dressing Adds a tangy flavor that perfectly complements the chicken.
  • 1 tbsp. avocado oil A high-heat oil that ensures the chicken gets a beautiful sear.
  • 1 tbsp. butter For sautéing mushrooms and onions, lending richness to the dish.
  • 10 oz. cremini mushrooms (sliced) Adds an earthy depth to the flavor profile.
  • 1/2 cup yellow onion (sliced) Sweet and savory, elevates the dish with their aromatic qualities.
  • 2 tbsp. water Helps in creating a little steam to soften the veggies.
  • 1/4 tsp. white pepper Offers a subtle spice without overpowering the dish.
  • 1/4 tsp. black pepper Adds a hint of heat.
  • 1/4 tsp. onion powder Enhances the onion flavor.
  • 1/4 tsp. garlic powder Provides a robust essence.
  • 1/2 tsp. salt Essential for bringing out the flavors.
  • 2 oz. Monterey Jack cheese (sliced) Adds a creamy, melting touch.

Method

Preparation
  1. Begin by placing the boneless skinless chicken breasts on a plate or cutting board. Using a jacquard tool or a fork, poke several holes—about 10 to 15 on each side.
  2. Place the pierced chicken breasts in a dish or a gallon-sized Ziploc bag. Pour the Italian dressing over the chicken, ensuring it’s well-coated. Cover the dish or seal the bag, then refrigerate for anywhere between 2 to 24 hours.
Cooking
  1. Once you’re ready to cook, preheat your oven to 400 degrees F. Heat a cast-iron skillet over medium-high heat. Pour in the avocado oil, and add the marinated chicken breasts, searing them for about 5 minutes on one side without moving them.
  2. Flip the chicken and repeat for the other side, then transfer it to a clean plate.
  3. Lower the heat to medium. Add the butter to the same skillet followed by the sliced cremini mushrooms and yellow onions. Sauté for about 5-7 minutes until both are softened and fragrant.
  4. Add about 2 tablespoons of water to the skillet, scraping up any flavorful bits stuck to the bottom.
  5. Stir the sautéed vegetables, then add the white pepper, black pepper, onion powder, garlic powder, and salt. Mix well to combine the flavors.
  6. Move the mushroom and onion mixture to one side of the skillet and place the seared chicken breasts back in. Spoon the mushroom-onion mix over the chicken, dividing it evenly. Top with slices of Monterey Jack cheese.
  7. Transfer the skillet to your preheated oven and bake for about 10 minutes. The chicken should be cooked through, and the cheese will be melted and slightly browned.

Notes

Marinating the chicken longer enhances flavor and tenderizes the meat. Use a meat thermometer to ensure that the chicken reaches an internal temperature of 165 degrees F for perfect doneness.
