Preparation
- Prepare the tangzhong by stirring together 1/3 cup bread flour and 1 cup water in a saucepan over medium heat until dissolved, then cook until thickened, about 10 minutes.
- In another bowl, whisk together 4 ¼ cups bread flour, 1/3 cup sugar, instant yeast, and 1 ½ teaspoons salt.
- Make a well in the dry ingredients and pour in the tangzhong, warm milk, and melted butter. Mix until a tacky dough forms.
- Knead the dough on a floured surface for about 10 minutes until elastic and soft.
- Shape the dough into a ball, cover with a damp towel, and let it rise in a warm place for about an hour until doubled.
- Punch down the dough, transfer to a floured surface, divide into 14 pieces, roll into balls, and place in a prepared baking pan.
- Cover with a damp cloth and proof for 40 minutes while preheating the oven to 375°F.
- Prepare an egg wash by mixing 1 egg with 1 tablespoon of water and brush the tops of the rolls before baking.
- Bake for 15 minutes, then brush with more egg wash and bake for an additional 10 minutes until golden brown.
Notes
Enhance the rolls by adding spices or brushing with melted butter and coarse sugar before baking. Incorporate dried fruits for added flavor.
