Method
Preparation
- Prepare a boiling water bath canner and four half-pint jars and lids, ensuring everything is clean for canning.
- Line a sieve or colander with a clean tea towel and place it over a large bowl. Grate the apples directly into the sieve.
- Add 2 tablespoons of sugar to the grated apples and gently toss to combine, allowing the sugar to draw out some natural juices.
Extracting Juice
- Gather the towel sides and squeeze out the juice from the grated apples, producing about 1 1/2 to 2 cups of fresh apple juice.
Cooking Mixture
- Measure one cup of the reserved apple juice and pour it into a medium saucepan with the remaining 1/4 cup of sugar and the spices.
- Stir until the sugar dissolves.
- Add the grated apples to the saucepan and cook for about 5 to 6 minutes until softened.
Canning
- Divide the citric acid evenly between the four jars.
- Carefully pack the hot apple mixture into each jar, leaving a 3/4 inch headspace.
- Wipe the rims of the jars, apply lids and rings, and process in the boiling water bath for 25 minutes.
- Remove from heat and let the jars stand in warm water for an additional 5 minutes.
Cooling & Storage
- Remove jars from the canner and place them to cool on a folded kitchen towel.
- Once cool, check that all seals are secure and store in a cool, dark place for up to one year.
Notes
For enhanced flavor, use a mix of sweet and tart apples. Try adding a pinch of ginger or cardamom for a unique twist. Adjust sugar to personal preference.
