Ingredients

Main Ingredients
  • 3 pounds apples (tart and crisp, like Granny Smith or Honeycrisp)
  • 2 tablespoons granulated sugar (to kickstart the sweetness)
  • 1/4 cup granulated sugar (to balance tartness)
  • 1 teaspoon cinnamon provides a warm, aromatic essence
  • 1/2 teaspoon freshly grated nutmeg adds a touch of earthiness
  • 1/4 teaspoon ground cloves adds depth and richness
  • 1 teaspoon citric acid keeps apples fresh and vibrant

Method

Preparation
  1. Prepare a boiling water bath canner and four half-pint jars and lids, ensuring everything is clean for canning.
  2. Line a sieve or colander with a clean tea towel and place it over a large bowl. Grate the apples directly into the sieve.
  3. Add 2 tablespoons of sugar to the grated apples and gently toss to combine, allowing the sugar to draw out some natural juices.
Extracting Juice
  1. Gather the towel sides and squeeze out the juice from the grated apples, producing about 1 1/2 to 2 cups of fresh apple juice.
Cooking Mixture
  1. Measure one cup of the reserved apple juice and pour it into a medium saucepan with the remaining 1/4 cup of sugar and the spices.
  2. Stir until the sugar dissolves.
  3. Add the grated apples to the saucepan and cook for about 5 to 6 minutes until softened.
Canning
  1. Divide the citric acid evenly between the four jars.
  2. Carefully pack the hot apple mixture into each jar, leaving a 3/4 inch headspace.
  3. Wipe the rims of the jars, apply lids and rings, and process in the boiling water bath for 25 minutes.
  4. Remove from heat and let the jars stand in warm water for an additional 5 minutes.
Cooling & Storage
  1. Remove jars from the canner and place them to cool on a folded kitchen towel.
  2. Once cool, check that all seals are secure and store in a cool, dark place for up to one year.

Notes

For enhanced flavor, use a mix of sweet and tart apples. Try adding a pinch of ginger or cardamom for a unique twist. Adjust sugar to personal preference.
