  • 1 tablespoon Sumac Adds a tangy touch
  • Salt and pepper Salt and pepper Essential for seasoning
For the Potatoes and Vegetables
  • 1 pound Yukon gold potatoes Creamy texture and buttery taste
  • 1 small onion, sliced For sweetness
  • 4-5 cloves garlic, chopped Brings rich aroma
  • 2 tablespoons olive or vegetable oil For sautéing
  • 2 tablespoons butter For a rich finish
  • 8-9 ounces olives, drained and chopped or sliced Adds briny goodness
  • 1/4 cup fresh Italian flat-leaf parsley, chopped Optional, for freshness

Method

Preparation of Potatoes
  1. Cut the potatoes into large, bite-sized chunks. Optionally peel them. Place in a medium saucepan, cover with water, and season with salt.
  2. Bring to a boil over medium-high heat, then reduce to a simmer. Cook until fork-tender. Drain in a colander.
Preparation of Chicken and Vegetables
  1. Cut chicken thighs into 3-inch pieces, blot moisture, and season with sumac, salt, and pepper.
  2. Halve the onion, remove papery skin, and slice into thin strips. Chop garlic cloves into large pieces.
Cooking the Chicken
  1. In a skillet, heat butter and oil over medium heat. Add chicken and sauté until brown on all sides, about 1 minute per side.
Adding Aromatics
  1. Add chopped garlic and sliced onions to the skillet. Stir occasionally until onions soften and chicken is cooked through, about 10-15 minutes.
Combining Ingredients
  1. Once chicken is cooked, add drained potatoes and olives. Stir to combine and cook for an additional 2-3 minutes.
  2. Sprinkle with chopped parsley before serving.
Serving
  1. Serve hot with a side of bread, biscuits, or a light salad.

Notes

Add red pepper flakes for heat. Fresh herbs can enhance flavor. To make a complete meal, consider adding vegetables like broccoli or bell peppers.
