Ingredients

Aromatics
  • 1 tablespoon extra-virgin olive oil A rich oil that adds depth and heartiness.
  • 1 cup chopped yellow onion The sweet, aromatic base of the dish.
  • 3 cloves garlic (smashed) Infuses the soup with irresistible aroma.
Main Ingredients
  • 2.5 cups chopped carrots The star ingredient providing natural sweetness.
  • 1 tablespoon coarsely chopped fresh ginger Adds warmth and spiciness.
  • 1 tablespoon apple cider vinegar or orange juice Provides acidity to balance the soup.
  • 3-4 cups vegetable broth Brings all the flavors together.
  • optional Coconut milk for garnish Adds creaminess and visual appeal.
  • 1 batch Carrot Top Pesto An herbaceous accompaniment.

Method

Preparation
  1. Heat the olive oil in a large pot over medium heat. Add the chopped onions and a pinch of salt and pepper. Cook until softened, about 8 minutes.
  2. Add the smashed garlic and chopped carrots. Cook for an additional 8 minutes, stirring occasionally.
  3. Stir in the chopped ginger along with the apple cider vinegar or orange juice. Pour in 3 cups of vegetable broth and bring to a gentle simmer. Cook until the carrots are tender, approximately 30 minutes.
  4. Remove the pot from heat and let cool slightly. Transfer the mixture to a blender and blend until smooth. If too thick, add up to 1 cup more broth.
  5. Ladle the soup into bowls and serve with carrot top pesto and drizzle with coconut milk if desired.

Notes

Use fresh, organic vegetables for enhanced flavors. Consider adding a squeeze of lime for extra zing. Adjust the ginger amount according to your preference.
