Preparation
- In a large soup pot, heat the butter and olive oil over medium-high heat, letting them meld together into a luscious mix.
- Add the thinly sliced leeks and chopped celery to the pot. Sauté until the leeks are lightly browned and softened, which should take about 5-7 minutes.
- Once the leeks and celery are ready, sprinkle the flour over the vegetables and cook, stirring frequently, for an additional 2 minutes.
Cooking
- Gradually stir in the seafood stock, whisking to prevent any lumps from forming.
- Add the diced potatoes and fresh thyme to the pot. Bring the mixture to a simmer, cover, and reduce the heat to low. Allow it to cook for about 25 minutes, or until the potatoes are tender.
- Stir in the cod, shrimp, scallops, clams, and sweet corn. Return to a gentle simmer.
- Cook for an additional 8-10 minutes, until the clams have opened. Discard any unopened clams after 15 minutes of cooking.
- Remove from heat and stir in the heavy cream or half-and-half.
Serving
- Serve your chowder garnished with freshly chopped chives.
Notes
For added depth, consider using a mix of seafood stocks. You can also substitute any seafood according to preference or availability, like mussels or lobster.
