Method

Preparation
  1. In a large soup pot, heat the butter and olive oil over medium-high heat, letting them meld together into a luscious mix.
  2. Add the thinly sliced leeks and chopped celery to the pot. Sauté until the leeks are lightly browned and softened, which should take about 5-7 minutes.
  3. Once the leeks and celery are ready, sprinkle the flour over the vegetables and cook, stirring frequently, for an additional 2 minutes.
Cooking
  1. Gradually stir in the seafood stock, whisking to prevent any lumps from forming.
  2. Add the diced potatoes and fresh thyme to the pot. Bring the mixture to a simmer, cover, and reduce the heat to low. Allow it to cook for about 25 minutes, or until the potatoes are tender.
  3. Stir in the cod, shrimp, scallops, clams, and sweet corn. Return to a gentle simmer.
  4. Cook for an additional 8-10 minutes, until the clams have opened. Discard any unopened clams after 15 minutes of cooking.
  5. Remove from heat and stir in the heavy cream or half-and-half.
Serving
  1. Serve your chowder garnished with freshly chopped chives.
