Preparation
- Preheat your oven to 400 degrees Fahrenheit and line a baking sheet with foil, spraying it with nonstick spray.
- Add the cauliflower florets to the baking sheet, tossing them with 1 tablespoon of olive oil, salt, and pepper. Spread them out and roast in the preheated oven for 20 to 30 minutes until they are lightly caramelized.
- In a large soup pot, heat the remaining 2 tablespoons of olive oil over medium heat. Add the chopped onions and sliced leeks, seasoned with salt and pepper, and sauté for about 10 minutes until they are lightly caramelized.
- Stir in the minced garlic and continue to sauté for another minute.
Cooking
- Pour in the gluten-free chicken broth and add the dried dill weed. Increase the heat to bring the mixture to a boil.
- Once boiling, add the roasted cauliflower to the pot. Reduce the heat and let it simmer for 10 minutes.
- For a silky texture, transfer the cauliflower and some of the broth into a blender, blend until smooth, and then pour it back into the soup pot.
- Bring the soup back to a gentle bubble, add the diced Yukon Gold potatoes, cover the pot, and reduce the heat again. Let it simmer for another 8 to 10 minutes or until the potatoes are tender.
Finishing
- Remove the pot from heat and stir in the fresh dill and a squeeze of lemon juice. Taste and adjust seasoning with additional salt and pepper as needed, then serve warm.
Notes
Roasting Alternatives: Consider roasting other vegetables for added depth of flavor. For a creamier consistency, blend in some coconut milk or sour cream after pureeing the soup. Fresh thyme or rosemary can be added during sautéing to complement the flavors nicely.
