  • ½ medium white onion (diced) Provides a savory depth.
  • 4 pieces roma tomatoes (chopped) Adds body and flavor.
  • 1 piece jalapeño pepper (diced) Adds a sharp kick.
  • 1 piece chipotle pepper (from can of chipotles in adobo sauce, chopped) Lends smoky richness.
  • 2 cloves garlic (chopped) Enhances overall taste.
  • ½ teaspoon dried oregano Brings a warm, earthy note.
  • ½ teaspoon sea salt Essential for seasoning.
  • ½ cup vegetable broth Provides moisture and depth.
  • ¼ cup chopped fresh cilantro Adds brightness.
  • 2 tablespoons fresh lime juice Brightens the sauce.
  • ½ teaspoon cane sugar (optional) Balances sharpness if needed.

Method

Preparation
  1. Heat the avocado oil in a small saucepan over medium heat.
  2. Add the onion, tomatoes, jalapeño, chipotle, garlic, oregano, and salt. Cook while stirring occasionally for about 10 minutes, or until the tomatoes are softened.
  3. Stir in the broth and let it cook for another minute.
  4. Remove from heat and stir in the fresh cilantro and lime juice.
  5. Use an immersion blender to blend the sauce until it's nearly smooth but retains some texture.
  6. Taste the sauce and add the optional sugar to balance the flavors if needed.
  7. Allow the sauce to cool and store in an airtight container in the fridge.

Notes

For deeper flavor, consider roasting the tomatoes before adding them. Adjust the heat level to your preference by modifying the amount of jalapeño used.
