Preparation
- Heat the ghee in a cast-iron skillet or medium Dutch oven over medium-high heat until melted.
- Add the diced chicken thighs and cook for 5-6 minutes until mostly cooked through.
- Transfer the chicken to a bowl. Lower the heat to medium and add the diced onion, bell peppers, carrot, and minced garlic. Sauté for about 3 to 4 minutes until softened but slightly crisp.
Cooking
- Add the tomato sauce, honey, cinnamon, cumin, coriander, sea salt, golden raisins, and the partially cooked chicken back into the pot. Stir well to combine.
- Cover the pot with a lid and let it simmer for at least 15 minutes, or up to an additional 25 to 30 minutes if your schedule allows.
- Ensure the chicken reaches an internal temperature of 165 degrees.
Serving
- Plate the stew alongside a bed of Ginger-Turmeric Rice and sprinkle with toasted slivered almonds.
Notes
For extra flavor, consider marinating the chicken in spices, salt, and honey for an hour or overnight. Feel free to add other vegetables like zucchini or chickpeas for added nutrition.
