Method
Preparation
- Slice each chicken breast in half horizontally to make 4 fillets. Pat dry with paper towels.
- Preheat your oven to 450˚F (232˚C) and prepare a baking sheet with a rack sprayed with nonstick cooking spray.
Prepare the Coating
- In a food processor, pulse the pistachios until crumbly. Mix with Parmesan cheese, onion powder, garlic powder, Italian seasoning, salt, and pepper.
- In a separate bowl, whisk the eggs. Dip chicken fillets in egg and dredge in the pistachio mixture.
Bake Chicken
- Place coated chicken on the prepared rack, spray with cooking spray, and bake for 18-20 minutes, flipping halfway through.
Make the Sauce
- Melt butter in a medium skillet, add garlic, and sauté until fragrant.
- Add Dijon mustard, honey, chicken broth, heavy cream, and Italian seasoning. Season with salt and pepper. Simmer for about 5 minutes.
Serve
- Serve the chicken fillets drizzled with the creamy sauce and garnish with fresh parsley.
Notes
Quality matters; use fresh pistachios for best flavor. Double the coating for extra crunch. Adjust seasoning to preference.
