Ingredients

Jam Ingredients
  • 1 1/3 cup diced peaches Use around three medium peaches for the perfect amount.
  • 1/3 cup diced jalapeños Adjust based on your spice preference.
  • 1 1/2 tablespoons powdered pectin Helps achieve a thick and luscious consistency.
  • 1 tablespoon lemon juice Bright acidity to balance sweetness.
  • 1 2/3 cup granulated sugar Essential for sweetness and preservation.

Method

Preparation
  1. Prepare the jars: Set 1 (16-ounce) mason jar or 2 (8-ounce) jars on a clean kitchen towel next to the stove.
  2. In a saucepan over medium heat, combine diced peaches, jalapeño, lemon juice, and powdered pectin. Stir often, bringing the mixture to a boil.
  3. Add all the sugar at once and stir well until it dissolves.
  4. Let the mixture boil vigorously for 1 minute.
  5. Remove from heat, skim off any foam that collects on the surface if desired.
  6. Pour the jam into prepared jars, leaving about ¼ inch of headspace. Wipe the rim with a wet towel and loosely place the lid on.
Water Bath Canning (Optional)
  1. Prepare a water bath canner and bring water to a boil.
  2. Place lids on jars and screw bands on fingertip tight. Lower jars into the boiling water bath.
  3. Boil for 10 minutes, then remove jars and let cool undisturbed for 24 hours.

Notes

For the sweetest jam, choose ripe peaches that yield slightly to pressure. Spice control can be adjusted based on personal preference. If you prefer a chunkier jam, mash the peaches less. Store in refrigerator for up to three weeks or in a cool, dry place for up to a year if processed through water bath canning.
