Preparation
- Combine cumin, chili powder, garlic powder, salt, and pepper in a small bowl and set aside.
- Heat a 12-inch skillet over medium heat; spray with nonstick spray or add up to 1 tablespoon of olive oil.
- Sprinkle the spice mixture generously on both sides of the chicken breasts.
- Sear the seasoned chicken in the skillet for 2-3 minutes on each side until browned, then set aside to rest.
Cooking
- In the same skillet, melt 1 tablespoon of butter; add chopped onion, diced jalapeños, and minced garlic, and sauté for 3-4 minutes.
- Pour in heavy cream and chicken broth, reducing heat to low; stir in cream cheese until melted.
- Add 1/2 cup of shredded cheddar cheese to the sauce, stirring until fully incorporated.
- Return the chicken to the skillet, spoon cheese sauce over it, and sprinkle remaining cheddar cheese on top.
- Cover and let simmer on low heat for 6-8 minutes to ensure chicken cooks through and flavors meld.
Notes
For extra flavor, garnish with fresh herbs like cilantro or parsley. Adjust spice levels with jalapeño seeds or experiment with different cheeses.
