Method
Preparation
- In a blender, combine 1 can of cannellini beans with 1 cup of vegetable broth. Blend until completely smooth and set aside.
- Heat olive oil in a large stockpot or Dutch oven over medium heat. Add chopped onions and carrots; cook for 7 to 8 minutes until softened.
- Add minced garlic and cook for an additional 1 to 2 minutes until fragrant.
Cooking
- Stir in remaining can of cannellini beans, drained chickpeas, and chopped rosemary. Cook together for 1 minute.
- Pour in the blended bean mixture, remaining vegetable broth, chopped escarole, salt, and black pepper. Bring to boil then reduce heat to simmer for 20 to 25 minutes.
- Once thickened, stir in lemon zest and juice. Gradually sprinkle in grated Parmesan while stirring continuously.
- Ladle into bowls and garnish with additional Parmesan, cracked black pepper, and freshly chopped rosemary, if desired.
Notes
Use fresh herbs for best flavor. Consider adding a pinch of red pepper flakes for heat. The soup can be made dairy-free by omitting the Parmesan. Store in refrigerator for up to 5 days or freeze for up to 3 months.
