Preparation
- In your food processor, combine the almond flour, pitted dates, cocoa powder, pumpkin puree, peanut butter, and maple syrup. Pulse until the mixture starts to stick together.
- Transfer the mixture into a 7-inch tart pan. Press evenly into the base and up the edges.
- Place the pan in the freezer while preparing the filling.
Filling
- In a high-speed blender, combine the pumpkin puree, peanut butter, almond milk, maple syrup, cinnamon, vanilla extract, salt, allspice, nutmeg, and cloves. Blend until smooth.
- Remove the crust from the freezer and pour the filling into the crust. Smooth the top.
- Sprinkle desired toppings over the pie.
Freezing
- Return the pie to the freezer and let it chill for 5-6 hours or overnight.
- When ready to serve, slice and let thaw for 5-10 minutes before serving.
Notes
For best results, allow pie to set overnight. Swap almond flour for other nut flours if desired. Consider adding chopped nuts into the filling for added crunch.
