Preparation
- Preheat your oven to 350 degrees F. Prepare a 9×5 inch loaf pan by spraying it with nonstick spray or lining it with parchment paper.
- If using nuts, toast them now on a dry baking sheet for 5-7 minutes, stirring occasionally until fragrant.
- In a large bowl, beat the softened butter until smooth. Add brown sugar and granulated sugar, and cream together for about 2 minutes.
- Add the eggs and vanilla extract, beating well to combine.
- In a separate bowl, mash the ripe bananas and stir them into the butter-sugar mixture.
- Add the flour without mixing, then blend oats into a powder; add to the bowl.
- Incorporate baking soda, baking powder, and kosher salt to the mix.
- Add optional spices (cinnamon, nutmeg, cloves) and gently stir until just blended.
- Fold in sour cream and the nuts (if using).
- Pour the batter into the prepared loaf pan, smoothing the top.
Baking
- Bake for 55-65 minutes, using a toothpick test to check for doneness.
- Allow the bread to cool in the pan for a bit, then transfer to a cooling rack for at least 20 minutes before slicing.
Notes
Store leftovers in an airtight container for up to 2 days, refrigerate if needed. The banana bread freezes well; wrap it tightly.
