Method

Preparation
  1. Preheat your oven to 350 degrees F. Prepare a 9×5 inch loaf pan by spraying it with nonstick spray or lining it with parchment paper.
  2. If using nuts, toast them now on a dry baking sheet for 5-7 minutes, stirring occasionally until fragrant.
  3. In a large bowl, beat the softened butter until smooth. Add brown sugar and granulated sugar, and cream together for about 2 minutes.
  4. Add the eggs and vanilla extract, beating well to combine.
  5. In a separate bowl, mash the ripe bananas and stir them into the butter-sugar mixture.
  6. Add the flour without mixing, then blend oats into a powder; add to the bowl.
  7. Incorporate baking soda, baking powder, and kosher salt to the mix.
  8. Add optional spices (cinnamon, nutmeg, cloves) and gently stir until just blended.
  9. Fold in sour cream and the nuts (if using).
  10. Pour the batter into the prepared loaf pan, smoothing the top.
Baking
  1. Bake for 55-65 minutes, using a toothpick test to check for doneness.
  2. Allow the bread to cool in the pan for a bit, then transfer to a cooling rack for at least 20 minutes before slicing.
