Preparation
  1. Start by placing a 4-quart saucepan over medium heat. Allow it to heat up until hot, and then add the olive oil, swirling it until shimmering.
  2. Add the diced onion, bell pepper, and minced garlic to the pot. Sauté for about 4-5 minutes, stirring occasionally, until the vegetables have softened and the garlic is fragrant.
  3. Stir in the chili powder and cumin, cooking for an additional 1-2 minutes to bloom the spices.
  4. Pour in the vegetable broth, followed by the rinsed lentils, black beans, diced carrots, crushed tomatoes (with their juice), tomato paste, crushed red pepper flakes, cocoa powder, salt, black pepper, and bay leaf. Stir well to combine.
Cooking
  1. Increase the heat until the mixture comes to a boil. Once boiling, reduce the heat and let it simmer lightly for 30-40 minutes, stirring occasionally until the lentils are tender.
  2. After cooking, remove the bay leaf. Serve your lentil chili hot with your favorite toppings.

Notes

Flavor Enhancements: Add fresh herbs or a squeeze of lime juice before serving. To boost protein, consider adding cooked quinoa or mushrooms. Adjust spices according to your heat preference.
