Ingredients

Dressing Base
  • 1/2 cup Lemon Juice About 2 large lemons, fresh squeezed for that perfect burst of tanginess.
  • 1 cup Extra Virgin Olive Oil Rich and fruity, it adds a luxurious texture and depth of flavor.
Seasonings
  • 2 cloves Garlic Minced for a robust and aromatic kick.
  • 1/2 teaspoon Salt Enhances the flavors without overshadowing them.
  • 1/4 teaspoon Thyme Dried, offering an earthy herbaceous note.
  • 1/4 teaspoon Basil Dried, contributing a sweet and slightly peppery taste.
  • 1/4 teaspoon Black Pepper Freshly ground for a bit of heat.
  • 2 tablespoons Water To balance the flavor, if needed.

Method

Preparation
  1. In a shakeable container, like a mason jar, add the fresh lemon juice and extra virgin olive oil. Secure the lid tightly.
  2. Shake well until the oil and juice are emulsified, creating a creamy, smooth base.
  3. Add minced garlic, salt, thyme, basil, and freshly ground black pepper. Secure the lid again and shake until everything is well combined.
  4. Open the jar and taste your dressing. If the lemon flavor is too strong, feel free to add the water to mellow it out. Shake to mix again.
  5. Refrigerate the dressing until you are ready to use it. This resting time allows the flavors to meld beautifully.
  6. Drizzle over your favorite salad or use it as a marinade for shrimp or fish to enhance their natural flavors.

Notes

For a creamier texture, consider whisking in a teaspoon of Dijon mustard or a tablespoon of Greek yogurt. Always use fresh lemon juice; it makes a significant difference in taste compared to bottled. Adjust the herbs based on your preference. Fresh herbs can be substituted for dried ones, just remember to use more.
