Ingredients

For the Marinade
  • 1 tablespoon lemon zest Adds brightness to the dish.
  • 2 tablespoons fresh lemon juice Enhances the marinade's tartness.
  • 2 tablespoons extra virgin olive oil Provides creamy richness.
  • 2 tablespoons nonfat Greek yogurt Adds subtle creaminess.
  • 3 cloves garlic, minced Robust flavor elevating the dish.
  • 2 tablespoons finely chopped fresh herbs A mix of basil and parsley.
  • ½ teaspoon salt Brings all flavors together.
  • ¼ teaspoon ground black pepper Adds earthy warmth.
  • 1¼ lbs boneless, skinless chicken breast The star of the dish.

Method

Prepare the Marinade
  1. In a medium bowl, whisk together the lemon zest, lemon juice, olive oil, Greek yogurt, minced garlic, chopped herbs, salt, and pepper.
Marinate the Chicken
  1. Pour the marinade into a gallon-sized plastic bag and add the chicken breasts, ensuring they are submerged.
  2. Press out as much air as possible, seal the bag, and turn to coat the chicken evenly. Refrigerate for at least 30 minutes, or up to a day, flipping halfway through.
Preheat the Grill
  1. Preheat your gas grill by setting all burners to high and closing the lid for about 15 minutes.
  2. Turn off the two front burners and keep the back burner on high.
Grill the Chicken
  1. Remove chicken from the bag and let excess marinade drip off. Place it on the low-heat grates.
  2. Cover the grill and cook for 6 to 9 minutes until light grill marks form.
  3. Flip the chicken, cover again, and cook for another 6 to 9 minutes until firm.
Get the Char
  1. Move chicken to the high flame area to achieve char marks, cooking uncovered for 5 to 6 minutes, flipping halfway.
Check for Doneness
  1. Ensure chicken registers 160 degrees F on an instant-read thermometer. Transfer to a plate, tent with foil, and let rest for 5 minutes before serving.

Notes

Marinate longer for deeper flavor. This recipe can also be done in a grill pan on the stovetop. Feel free to experiment with spices.
