Ingredients
Method
Prepare the Marinade
- In a medium bowl, whisk together the lemon zest, lemon juice, olive oil, Greek yogurt, minced garlic, chopped herbs, salt, and pepper.
Marinate the Chicken
- Pour the marinade into a gallon-sized plastic bag and add the chicken breasts, ensuring they are submerged.
- Press out as much air as possible, seal the bag, and turn to coat the chicken evenly. Refrigerate for at least 30 minutes, or up to a day, flipping halfway through.
Preheat the Grill
- Preheat your gas grill by setting all burners to high and closing the lid for about 15 minutes.
- Turn off the two front burners and keep the back burner on high.
Grill the Chicken
- Remove chicken from the bag and let excess marinade drip off. Place it on the low-heat grates.
- Cover the grill and cook for 6 to 9 minutes until light grill marks form.
- Flip the chicken, cover again, and cook for another 6 to 9 minutes until firm.
Get the Char
- Move chicken to the high flame area to achieve char marks, cooking uncovered for 5 to 6 minutes, flipping halfway.
Check for Doneness
- Ensure chicken registers 160 degrees F on an instant-read thermometer. Transfer to a plate, tent with foil, and let rest for 5 minutes before serving.
Notes
Marinate longer for deeper flavor. This recipe can also be done in a grill pan on the stovetop. Feel free to experiment with spices.
