Ingredients

Custard Base
  • 66 g Granulated Sugar To sweeten the custard base beautifully.
  • 1 unit Lemon For lemon zest to add brightness.
  • 2 tsp Cornstarch For a delicate texture that helps stabilize the custard.
  • 105 g Egg Yolks Provides rich, creamy essence essential for the custard.
  • 20 g Honey A natural sweetener that adds depth and complexity.
  • 50 g Lemon Juice For a wonderful, tangy kick.
  • 480 g Heavy Cream Crucial for achieving the luxurious creaminess.
  • 1 pod Vanilla Beans Or 1/2 tsp of vanilla extract can be used.
  • 120 g Whole Milk Balances creamy elements while keeping custard smooth.
Topping
  • 1.5 tsp Granulated Sugar for Caramel Gives the brulee its signature crunch.

Method

Preparation
  1. Preheat your oven to 300°F (149 °C) and prepare a pot of hot simmering water for the water bath.
  2. In a saucepan, gently heat the heavy cream, the split vanilla pod, and its seeds over medium-low heat until it simmers, stirring occasionally.
Mixing
  1. In a separate bowl, whisk together the granulated sugar, lemon zest, and cornstarch until there are no lumps.
  2. Add the egg yolks into the sugar mixture and whisk until well combined and frothy.
  3. Whisk in honey and lemon juice until combined.
  4. Gradually pour a small amount of hot heavy cream into the yolks while whisking continuously. Repeat until all cream is incorporated.
  5. Mix in cold whole milk and strain the mixture through a fine sieve into a bowl to eliminate lumps.
Baking
  1. Pour the custard base into five 5-inch ramekins placed on a baking tray lined with kitchen paper for stability.
  2. Pour hot simmering water into the baking tray to fill halfway up the sides of the ramekins. Bake for about 40 minutes.
  3. The filling should set but still jiggle slightly in the center.
Cooling and Serving
  1. Remove the ramekins from the water bath and allow them to cool before transferring to the fridge. Chill for at least 6 hours or overnight.
  2. Sprinkle a thin layer of granulated sugar over each custard and caramelize using a blowtorch until golden brown and bubbling. Allow to cool for about 3 minutes.

Notes

Use fresh lemons for the best flavor. Be patient with slow baking for a luxurious texture. Adjust sweetness to taste before baking.
