Ingredients

For the Dough
  • 1 Cup Whole Milk (90℉) This creamy milk is the foundation that keeps your rolls tender and moist.
  • 2 ½ Tablespoons Granulated Sugar (30g) Helps the bread to brown beautifully and enhances flavor.
  • 2 Teaspoons Active Dry Yeast (11g) Vital ingredient ensures your rolls rise perfectly.
  • 3 Cups Bread Flour Provides structure and chewiness for your rolls.
  • 2 Teaspoons Fine Sea Salt (12g) Enhances flavor and strengthens the dough.
  • 2 Eggs (Beaten) Adds richness and color.
  • 3 Tablespoons Unsalted Butter (Cold, Cubed) Adds creaminess and rich flavor.
For the Egg Wash
  • 1 Egg White (Beaten) Creates a beautiful shine on the rolls once baked.
  • 1 Tablespoon Water Helps thin the egg wash for even application.

Method

Preparation
  1. In a medium-sized bowl, combine the warm milk, granulated sugar, and active dry yeast. Let the mixture bloom for 5 to 10 minutes until frothy.
  2. In the bowl of a stand mixer, combine the bread flour and fine sea salt.
  3. Add the bloomed yeast mixture and beaten eggs into the bowl with flour and salt. Knead the dough on low speed for 3 to 5 minutes.
  4. Add the cold, cubed butter and knead for an additional 8 to 10 minutes until smooth.
  5. Turn the dough onto a lightly floured surface, form it into a ball, and place it in a greased bowl. Cover and let it rise for 1 hour.
Shaping & Rising
  1. Punch down the risen dough, turn it out, and divide it into six equal pieces.
  2. Roll each piece into a 9x5 inch rectangle and tightly roll into a loaf shape, sealing seams.
  3. Place the shaped rolls seam side down on a parchment-lined baking sheet. Cover and let rise for 30 minutes while preheating oven to 400°F (200°C).
Baking
  1. Mix the beaten egg white with water and brush over the tops of the rolls.
  2. Score the tops of the rolls about ¼ inch deep in three spots.
  3. Bake for 15-20 minutes until golden brown and internal temperature reaches 195-200°F.
  4. Cool completely on a wire rack before slicing.

Notes

Use fresh ingredients for the best rise. Properly knead your dough to develop gluten. If your kitchen is cold, create warmth for rising.
