Ingredients

Dry Ingredients
  • 3 cups gluten-free flour A blend that gives a delightful fluffiness.
  • 1 tsp salt Enhances the flavor.
  • 2 tsp instant yeast Makes your rolls rise.
  • 2 Tbsp sugar Adds a hint of sweetness.
Wet Ingredients
  • 2 large eggs (at room temperature) Adds richness to the dough.
  • ¼ cup unsalted butter (softened) Infuses a creamy flavor.
  • 1 ¼ cups milk (at room temperature) Can use lactose-free or dairy-free milk.
  • 1 tsp apple cider vinegar (or lemon juice) Helps activate the yeast.

Method

Preparation
  1. In the mixing bowl of your electric mixer, combine gluten-free flour, instant yeast, sugar, and salt.
  2. Warm the milk to 45°C (115°F). If the milk is too hot, it will kill the yeast.
  3. Add the warmed milk, softened butter, eggs, and apple cider vinegar to the bowl with the flour mixture. Mix until fully combined to form a soft, slightly sticky dough.
  4. Grease a 9×13 inch baking pan or two 9-inch round pans.
  5. Using an ice cream scoop, place the dough into the greased pans. Spray your scoop with gluten-free cooking spray to avoid sticking.
  6. Cover the pans with a kitchen towel and let them rise in a warm place for one hour.
Baking
  1. Adjust the oven rack to a lower position and preheat your oven to 350°F (177°C).
  2. Bake the rolls for about 25 to 30 minutes until golden brown.
  3. Melt two tablespoons of butter and brush the tops of the rolls before serving.

Notes

Store any leftover rolls tightly covered at room temperature for 2-3 days or in the refrigerator for up to one week. For longer storage, freeze them individually.
