Preparation
- In the mixing bowl of your electric mixer, combine gluten-free flour, instant yeast, sugar, and salt.
- Warm the milk to 45°C (115°F). If the milk is too hot, it will kill the yeast.
- Add the warmed milk, softened butter, eggs, and apple cider vinegar to the bowl with the flour mixture. Mix until fully combined to form a soft, slightly sticky dough.
- Grease a 9×13 inch baking pan or two 9-inch round pans.
- Using an ice cream scoop, place the dough into the greased pans. Spray your scoop with gluten-free cooking spray to avoid sticking.
- Cover the pans with a kitchen towel and let them rise in a warm place for one hour.
Baking
- Adjust the oven rack to a lower position and preheat your oven to 350°F (177°C).
- Bake the rolls for about 25 to 30 minutes until golden brown.
- Melt two tablespoons of butter and brush the tops of the rolls before serving.
Notes
Store any leftover rolls tightly covered at room temperature for 2-3 days or in the refrigerator for up to one week. For longer storage, freeze them individually.
