  • 3 cups crumbled homemade gingerbread cake The base of your cake pops is rich, moist, and bursting with ginger and cinnamon notes.
  • 1/3 cup softened unsalted butter Creamy and smooth, it binds the cake crumbs while adding a luscious texture.
  • 2 1/2-3 cups powdered sugar Sweet and fluffy, it enhances the cake's richness.
  • 1/2 teaspoon vanilla extract This aromatic ingredient brings warmth and depth.
  • 1-2 tablespoons cream or milk Add it gradually for the ideal consistency.
  • 12-15 pieces lollipop sticks These sturdy sticks provide a fun way to enjoy your cake pops.
  • 12 ounces white chocolate melting wafers This smooth chocolate coating transforms the cake pops into a decadent treat.
  • sprinkles These colorful additions offer a festive touch.

Method

Preparation
  1. Begin by making a homemade gingerbread cake. Once it cools, crumble it into fine pieces in a large mixing bowl.
  2. Transfer the crumbled gingerbread cake to the bowl of a stand mixer fitted with the paddle attachment. Mix on medium speed until you achieve fine crumbs.
  3. In another mixing bowl, combine the softened butter and powdered sugar. Mix on medium speed for 2-3 minutes until fluffy. Then, add in the vanilla extract and cream.
  4. Take about 2-3 tablespoons of the cake crumbs and roll them into a ball. Adjust the frosting as necessary to achieve the desired consistency.
  5. Roll them into balls and place lollipop sticks into the center of each one.
  6. Stand the cake pops up in a container and chill them in the fridge for about 1-2 hours to firm up.
Dipping
  1. While the cake pops chill, create a stand for your cake pops using an egg carton.
  2. Melt the white chocolate wafers according to package directions until smooth.
  3. Once the pops have firmed, dip each one into the melted chocolate, then gently shake off any excess.
  4. If desired, roll the dipped cake pops in sprinkles before placing them into the stand to dry.
  5. Allow the chocolate coating to dry completely, approximately 1-2 hours, before serving.
Storing
  1. Place leftovers in an airtight container where they can be enjoyed for up to 4 days.

Notes

To enhance flavors, consider adding a pinch of ground nutmeg or cloves to the cake mixture. Experiment with different types of chocolate coatings.
