Preparation
- Begin by making a homemade gingerbread cake. Once it cools, crumble it into fine pieces in a large mixing bowl.
- Transfer the crumbled gingerbread cake to the bowl of a stand mixer fitted with the paddle attachment. Mix on medium speed until you achieve fine crumbs.
- In another mixing bowl, combine the softened butter and powdered sugar. Mix on medium speed for 2-3 minutes until fluffy. Then, add in the vanilla extract and cream.
- Take about 2-3 tablespoons of the cake crumbs and roll them into a ball. Adjust the frosting as necessary to achieve the desired consistency.
- Roll them into balls and place lollipop sticks into the center of each one.
- Stand the cake pops up in a container and chill them in the fridge for about 1-2 hours to firm up.
Dipping
- While the cake pops chill, create a stand for your cake pops using an egg carton.
- Melt the white chocolate wafers according to package directions until smooth.
- Once the pops have firmed, dip each one into the melted chocolate, then gently shake off any excess.
- If desired, roll the dipped cake pops in sprinkles before placing them into the stand to dry.
- Allow the chocolate coating to dry completely, approximately 1-2 hours, before serving.
Storing
- Place leftovers in an airtight container where they can be enjoyed for up to 4 days.
Notes
To enhance flavors, consider adding a pinch of ground nutmeg or cloves to the cake mixture. Experiment with different types of chocolate coatings.
