Method
Preparation
- Preheat your oven to 375 degrees Fahrenheit.
- In a large mixing bowl, combine the graham cracker crumbs and 1/4 cup of sugar. Mix well.
- Drizzle in the melted butter and stir until the crumbs are evenly coated.
- Press the graham cracker mixture evenly into the bottom of a 9-inch pie plate.
- Bake for 7 minutes or until lightly browned. Let it cool completely.
Filling Preparation
- Whip the heavy whipping cream until light and fluffy, then set aside.
- In another bowl, beat the cream cheese, 3/4 cup of granulated sugar, and lemon zest until smooth.
- Puree the diced strawberries in a blender or food processor, keeping some small chunks for texture.
- Mix the pureed strawberries and vanilla extract into the cream cheese mixture until fully incorporated.
- Gently fold in the whipped cream until well mixed.
- Pour the strawberry cheesecake mixture into the cooled crust and smooth the top.
Freezing & Serving
- Cover with plastic wrap and freeze for a minimum of 4 hours.
- When ready to serve, slice with a hot knife for clean cuts and top with whipped cream and additional strawberries.
Notes
Choose ripe strawberries for the best flavor. Room temperature cream cheese ensures a smooth filling without lumps. Store leftover cheesecake securely in the freezer for up to 2 months. Consider adding other fruits or a chocolate drizzle for variations.
