Ingredients

Dry Ingredients
  • 1 1/3 cups gluten-free oat flour Adds a lovely, nutty flavor while maintaining a soft texture.
  • 1/4 teaspoon baking powder Helps the cookies rise just enough for that perfect chew.
  • 1/2 teaspoon baking soda Works alongside the baking powder to create that ideal fluffy texture.
  • 3/4 teaspoon ground cinnamon Adds warmth and a hint of spice.
  • 1/4 teaspoon salt Balances the sweetness and enhances the overall flavor.
Wet Ingredients
  • 1/4 cup + 2 tablespoons solid coconut oil Gives the cookies a rich, satisfying creaminess without dairy.
  • 2/3 cup coconut sugar A natural sweetener with a touch of caramel flavor.
  • 1 1/3 pieces modified flax eggs Plant-based egg substitute.
  • 1 teaspoon pure vanilla extract Infuses a delicious depth of flavor.
  • 1/2 cup + 2 tablespoons pecans (chopped) Adds a delightful crunch and nutty richness.

Method

Preparation
  1. Preheat your oven to 375°F (190°C) and line a cookie sheet with parchment paper or greased foil.
  2. In a medium bowl, whisk together the gluten-free oat flour, baking powder, baking soda, cinnamon, and salt. Set aside.
  3. In a large bowl, combine solid coconut oil and coconut sugar. Mix until the texture resembles clumpy wet sand.
  4. Add the modified flax egg and vanilla extract to the coconut mixture and whisk until just combined.
  5. Gradually mix in dry ingredients using a hand mixer or wooden spoon until you achieve a cohesive dough.
  6. If the dough feels sticky, chill it in the freezer for 15-25 minutes.
Baking
  1. Using a 2-tablespoon scoop, place dough onto the prepared baking sheet and press additional pecans onto the tops.
  2. Bake in the preheated oven for 10-14 minutes, keeping an eye on them.
  3. Let the cookies rest for about 10 minutes on the baking sheet before transferring them to a cooling rack.
  4. Once cooled, enjoy your delightful cookies!

Notes

Chilling your dough helps create a firmer texture for thicker cookies. Consider substituting pecans for walnuts or chocolate chips for a different flavor.
