Method

Preparation
  1. In a large pot, bring 2 quarts of salted water to boil, using 2-3 teaspoons of salt.
  2. Once boiling, add your pasta and cook until al dente, reserving one cup of the hot salted water for later use.
Cooking Vegetables
  1. Heat 2 tablespoons of olive oil in a large sauté pan over medium heat.
  2. Add the sliced leeks and asparagus, cooking until just softened.
  3. Toss in the snap peas and minced garlic and season with salt, pepper, and chili flakes.
  4. Add the peas last, cooking until the vegetables are tender-crisp and vibrant.
Combine Pasta and Sauce
  1. Once the pasta is al dente, drain it and add it to the sauté pan with the veggies.
  2. Stir in the lemon zest, grated pecorino cheese, and a splash of the reserved pasta water, mixing gently.
  3. Continue to mix until the cheese melts and creates a creamy sauce.
Final Touches
  1. Stir in about 2/3rds of the fresh herbs and all the heavy cream.
  2. Taste and adjust seasoning with more salt, pepper, or pasta water if necessary.
Serving
  1. Divide the Pasta Primavera among bowls, topping each serving with remaining herbs, additional cheese, and lemon zest.

Notes

To enhance flavors, sauté garlic until fragrant before adding veggies. Consider adding seasonal vegetables for freshness.
