- In a small bowl, combine all the dried herbs and spices: paprika, oregano, all-spice, salt, pepper, and lemon zest.
- Scatter half of the spice mixture onto the cling film.
Seasoning
- Place the chicken fillets on top of the spice layer.
- Sprinkle the remaining spice mixture over the fillets.
- Cover with another layer of cling film and pound lightly on the chicken to flatten and tenderize.
Cooking
- Heat olive oil in a pan over medium heat.
- Add seasoned chicken fillets and cook for approximately 4-5 minutes until golden.
- Flip the chicken and add torn rosemary and bruised garlic clove to the pan.
- Continue cooking until the chicken is cooked through.
Finishing Touch
- Squeeze juice of half a lemon over the chicken just before serving.
- Deglaze the pan with a splash of water and turn the chicken to coat it in the pan juices.
Notes
For extra flavor, marinate the chicken in the spice mixture and olive oil. Experiment with different herbs for variations. Use a meat thermometer to ensure the chicken reaches 165°F (75°C).
