Ingredients

For the Crepe Batter
  • 2 cups all-purpose flour, sifted This forms the base of your crepes, giving them structure and a light texture.
  • 1 pinch salt Enhances flavor and balances the sweetness.
  • 4 large eggs Help bind the mixture and impart richness.
  • 1/4 cup melted butter Adds a creamy richness and contributes to a tender texture.
  • 1 tablespoon sugar (optional) Gives a hint of sweetness.
  • 2 cups milk Provides necessary moisture, ensuring soft and flexible crepes.
  • 2 tablespoons oil for cooking For greasing the pan, ensuring crepes do not stick.

Method

Mixing the Batter
  1. Pour the sifted flour and a pinch of salt into a large mixing bowl.
  2. Create a well in the center, crack the eggs into this well, then add the melted butter and sugar if using.
  3. With a whisk, vigorously mix from the center, gradually pouring in a little milk.
  4. Add in the remaining milk until you achieve a silky, homogeneous mixture.
  5. Cover the bowl and let the batter rest for at least 2 hours.
Heating the Pan
  1. Heat a 15 cm (6-inch) crepe pan over medium heat.
  2. Drizzle a small amount of oil on a paper towel and lightly grease the surface of the pan.
Cooking the Crepes
  1. Pour a ladleful of the crepe batter into the hot pan.
  2. Tilt the pan in all directions to spread the batter into a thin layer.
  3. Cook until the surface appears set and slightly dry, then flip gently with a spatula.
  4. Cook for another minute until it reaches a lovely golden hue.
Finalizing
  1. Transfer the cooked crepes to a plate and stack them neatly.
  2. Repeat the process with the remaining batter.
Serving
  1. Serve warm with toppings of your choice such as butter, sugar, jam, fresh fruits, or melted chocolate.

Notes

Resting the batter allows gluten to relax for softer crepes. If the batter is too thick, whisk in more milk. Consider adding flavors like vanilla or cinnamon for variations.
