Ingredients

For the Dough
  • 4 cups bread flour or all-purpose flour This will serve as the foundation of our bread, offering a light and airy texture.
  • 1 package (8 grams - 0.28 oz) instant yeast This ingredient is vital for the dough to rise, creating that fluffy interior.
  • 1.5 cups lukewarm water The warmth helps activate the yeast.
  • 3/4 tsp salt A crucial component that enhances the overall flavor.
  • 1 tbsp sugar This subtle sweetness helps balance flavors and promotes browning.
  • 2+1 tbsp olive oil Adds richness and moisture to your dough.

Method

Activating the Yeast
  1. Place the instant yeast in a bowl. Add 2 tablespoons of flour, 1 tablespoon of sugar, and enough lukewarm water to create a thick batter. Allow to sit until bubbly and frothy.
Making the Dough
  1. Once the yeast mixture is bubbling, add the remaining flour, 2 tablespoons of olive oil, and salt. Gradually add the lukewarm water while kneading until smooth and soft.
Kneading and Rising
  1. If using a stand mixer, attach the dough paddle. After kneading, coat the dough with 1 tablespoon of olive oil. Cover and let rise in a warm area until doubled in size, about 1 to 2 hours.
Shaping the Pitas
  1. Punch down the risen dough and knead for a couple of minutes. Divide into 10 equal pieces and roll each into small balls.
Rolling Out
  1. Flatten each ball of dough to about ½ cm (¼ inch) thick with a rolling pin.
Baking
  1. Preheat the oven to 200°C (400°F) and bake the pitas for 5-10 minutes until the bottom is light brown.
Cooling
  1. Remove from the tin and cool on a wire rack for five minutes. Wrap in a kitchen towel to keep soft.

Notes

Using bread flour can lead to a chewier texture, while all-purpose flour yields a softer pita. Consider incorporating dried herbs or spices for additional flavor. Place a pan of water in the oven while baking to create steam for puffier pitas.
