Method
Preparation
- Lightly spray the bottom and sides of your slow cooker with nonstick spray.
- Place your boneless, skinless chicken breasts in the bottom of the slow cooker.
Making the Sauce
- In a small bowl or measuring cup, combine the soy sauce, apple cider vinegar, honey, brown sugar, and minced garlic. Stir to create a fragrant mixture.
Cooking
- Pour the sauce mixture over the chicken breasts, ensuring they are well coated. Cover and cook on high for 3 to 4 hours or low for 6 to 8 hours until the chicken is tender.
- Carefully remove the chicken from the slow cooker and shred using two forks.
- In a small saucepan, pour the remaining sauce from the slow cooker. Combine the cornstarch with the water and add it to the sauce. Heat until it comes to a low boil, stirring often, and cook for another minute until thickened.
Serving
- Pour the thickened teriyaki sauce over the shredded chicken and toss to combine.
- Serve your teriyaki chicken over rice or quinoa, topped with sesame seeds and sliced green onions.
Notes
For extra flavor, marinate the chicken in the sauce for a few hours. Feel free to add vegetables like bell peppers or broccoli in the last hour of cooking. Adjust sweetness by modifying honey or brown sugar.
