Method

Preparation
  1. Lightly spray the bottom and sides of your slow cooker with nonstick spray.
  2. Place your boneless, skinless chicken breasts in the bottom of the slow cooker.
Making the Sauce
  1. In a small bowl or measuring cup, combine the soy sauce, apple cider vinegar, honey, brown sugar, and minced garlic. Stir to create a fragrant mixture.
Cooking
  1. Pour the sauce mixture over the chicken breasts, ensuring they are well coated. Cover and cook on high for 3 to 4 hours or low for 6 to 8 hours until the chicken is tender.
  2. Carefully remove the chicken from the slow cooker and shred using two forks.
  3. In a small saucepan, pour the remaining sauce from the slow cooker. Combine the cornstarch with the water and add it to the sauce. Heat until it comes to a low boil, stirring often, and cook for another minute until thickened.
Serving
  1. Pour the thickened teriyaki sauce over the shredded chicken and toss to combine.
  2. Serve your teriyaki chicken over rice or quinoa, topped with sesame seeds and sliced green onions.

Notes

For extra flavor, marinate the chicken in the sauce for a few hours. Feel free to add vegetables like bell peppers or broccoli in the last hour of cooking. Adjust sweetness by modifying honey or brown sugar.
