Base Ingredients
  • 1 tablespoon olive oil For richness
  • 1 medium white onion For sweetness
  • 2 medium carrots Providing a gentle earthy flavor
  • 3 sticks celery For crispness and aroma
  • 6 cloves garlic Minced for pungent flavor
  • 2 tablespoons butter For added creaminess
  • 4 cups chopped potatoes About 4 medium potatoes for heartiness
  • 1/4 cup flour For thickening
  • 4 cups chicken stock As the savory base
  • 1 cup chopped dill pickles For a tangy bite
  • 1 cup pickle brine To enhance the dill flavor
  • 1/4 cup fresh dill For herbaceous essence
  • 2 leaves bay leaves For layering flavors
  • to taste teaspoon salt & pepper To taste
  • 1 teaspoon garlic powder For depth
  • 1 teaspoon onion powder For depth
  • 1/2 cup sour cream For a creamy finish
  • 1 cup shredded Havarti cheese For a cheesy twist
  • to taste teaspoon red pepper flakes For topping and heat

Method

Preparation
  1. Dice the onion, carrots, and celery into small, even pieces. Mince the garlic, chop the potatoes into small chunks, and cut the dill pickles into small pieces. Finely mince the fresh dill.
Cooking the Soup
  1. In a large soup pot or Dutch oven over medium heat, add a drizzle of olive oil. Sauté the onions, celery, and carrots for about 5 minutes until soft and fragrant.
  2. Incorporate the minced garlic and butter into the pot, sautéing for another 1-2 minutes until fragrant.
  3. Mix the chopped potatoes into the sautéed vegetables, ensuring they are well-combined.
  4. Sprinkle in the flour, mixing until evenly combined to help thicken the soup.
  5. Gradually add the chicken stock, chopped dill pickles, pickle brine, fresh dill, bay leaves, and all seasonings (salt, pepper, garlic powder, and onion powder). Stir well and bring to a low simmer. Cover and let cook for 15-20 minutes.
  6. Once the potatoes are fork-tender, turn off the heat. Gently fold in the sour cream and shredded Havarti cheese while stirring continuously until everything is melted and creamy.
  7. Conduct a final taste test, adding more seasoning if necessary. Serve hot, garnished with additional sour cream, fresh dill, and a sprinkle of red pepper flakes.

Notes

Consider using your favorite dill or bread-and-butter pickles for different flavor profiles. For a thicker consistency, blend a portion of the soup using an immersion blender before adding cream and cheese. For a vegan version, substitute butter with olive oil, chicken stock with vegetable stock, and use coconut cream instead of sour cream.
