Method
Cooking Chicken
- Preheat a large skillet over medium heat. Add olive oil and ensure it coats the pan.
- Lay the chicken cutlets in the skillet, seasoning with salt, pepper, and half of the garlic powder. Cook for about 5 minutes until golden brown.
- Flip the chicken cutlets, season the other side with salt, pepper, and garlic powder, then cook for another 3 minutes until golden.
- Transfer the chicken to a plate and set aside; it can be slightly undercooked.
Cooking Vegetables
- Add finely diced onion to the skillet and stir for about 2 minutes until softened.
- Add sliced mushrooms and minced garlic, stirring well, and cook for another 5 minutes until mushrooms are tender.
Making the Sauce
- In a medium bowl, whisk together chicken broth and flour until smooth.
- Pour the chicken broth mixture into the skillet with mushrooms and onions. Add ¼ cup of half and half and dried thyme, stirring to combine.
- Increase creaminess by adding more half and half or thinner consistency with additional chicken broth.
Final Assembly
- Add chicken cutlets back into the skillet along with any juices. Allow the sauce to simmer for 2-3 minutes until the chicken is cooked through and the sauce thickens.
- Serve warm, garnished with fresh herbs over your choice of side dish.
Notes
To keep chicken juicy, avoid overcooking it initially. You can substitute half and half with heavy cream for a richer sauce. Consider adding fresh thyme for an extra flavor boost.
