Preparation
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles in boiling water according to package directions until al dente. Drain and drizzle with a bit of oil.
- Heat the olive oil in a large pan over medium-high heat. Sauté the diced sweet onion and minced garlic for about 5-7 minutes until translucent and fragrant.
- Add the marinara sauce, seasoning with kosher salt and pepper, and let simmer for approximately 10 minutes.
- In a food processor, combine the cottage cheese, 3 cups of shredded mozzarella, the egg, grated parmesan, spinach, Italian seasoning, sea salt, and pepper. Blend until smooth but slightly chunky.
Assembly
- Pour half a cup of tomato sauce into a 9x13 baking dish. Lay down three lasagna noodles without overlapping.
- Spread a layer of sauce on top, followed by a generous layer of the cheese blend. Repeat the layers until all ingredients are used, finishing with a layer of sauce topped with remaining mozzarella.
Cooking
- Bake in the preheated oven for 45 minutes, until bubbly and golden-brown on top.
- Garnish with freshly chopped parsley before serving.
