Preparation
- Preheat your oven to 350 degrees F and prepare a 9-inch pie dish with cooking spray.
- Mix together graham cracker crumbs, sugar, and melted butter in a medium bowl until it resembles wet sand.
- Press the mixture into the bottom and sides of the prepared pie dish.
- Bake the crust for 8-10 minutes until golden brown. Allow it to cool completely.
Filling
- In another medium bowl, whisk together the sweetened condensed milk and egg yolks until smooth.
- Add the key lime juice and lime zest, whisk for about a minute until well combined.
- Pour the filling into the cooled crust and bake for an additional 15 minutes.
- Transfer the pie to a cooling rack to cool to room temperature before chilling in the refrigerator for at least 3 hours.
Topping and Serving
- When ready to serve, whip the cold heavy cream with an electric mixer until soft peaks form, adding powdered sugar if desired.
- Top the pie with the whipped cream and enjoy!
Notes
For stronger lime flavor, adjust key lime juice. Store leftovers in the fridge covered or freeze for up to a month.
