Method

Preparation
  1. Preheat the oven to 350 degrees Fahrenheit.
  2. In a blender or food processor, grind up the gingersnap cookies until they are fine crumbs.
  3. Combine these crumbs with melted butter, sugar, and a pinch of salt to create a mixture that sticks together when pressed.
  4. Press the cookie mixture firmly into a 9-inch pie dish and bake for 8-10 minutes. Allow it to cool completely.
Chocolate Ganache
  1. In a microwave-safe bowl, heat 2/3 cup of heavy cream until warm.
  2. Pour it over 1 cup of semisweet chocolate chips and let it sit for 3 minutes. Stir until smooth, heating further if necessary.
Assembling Layers
  1. Pour the ganache into the cooled crust and freeze until solid, about an hour.
  2. In another bowl, mix together 1/4 cup of heavy cream, fresh orange juice, and orange zest. Heat until hot, then pour over 1 1/4 cups of chocolate chips. Stir until smooth and chill.
  3. Add whipped cream, vanilla, and a pinch of salt to the chocolate-orange mixture and whip until mousse-like. Pour over the ganache and chill for at least 4 hours to set.
Final Touches
  1. Whip the remaining heavy cream with powdered sugar and vanilla until fluffy. Spread over the pie and garnish with chocolate curls.
  2. Serve and enjoy!

Notes

Chilling the pie overnight allows flavors to meld beautifully. For a softer crust, reduce baking time slightly.
