Ingredients

Main Ingredients
  • 1 tablespoon olive oil This healthy fat helps to create a golden, crispy exterior on the chicken.
  • 6 pieces boneless skinless chicken thighs or breasts (cut into bite-sized pieces) Tender and juicy, these pieces are the star of the show, absorbing all the wonderful seasonings as they cook.
  • 4 pieces bell peppers (sliced) A rainbow of colors adds visual appeal and a slight sweetness.
  • 1 small onion (sliced) Aromatic and slightly sweet when cooked, enhances flavor.
  • 1 package fajita seasoning mix Includes spices like cumin, chili powder, and paprika, creating the fajita flavor.
  • 1 cup sour cream Adds creaminess and tanginess.
  • 4 ounces cream cheese (softened) Adds an extra layer of creaminess.
  • 2 cups cheddar cheese (grated) Forms a bubbly and delicious topping.
Optional Toppings
  • Avocado, guacamole, sour cream, and salsa Enhance the dish with fresh flavors.

Method

Preparation
  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. In a skillet over medium heat, heat the olive oil. Add the chicken and sauté until fully cooked, about 5-7 minutes. Remove chicken and set aside.
  3. In the same skillet, add sliced onions and bell peppers. Sauté until desired tenderness is reached, about 4-5 minutes.
Combination
  1. Return the cooked chicken to the pan, stir in fajita seasoning mix, sour cream, and cream cheese. Mix well.
Baking
  1. Spread the mixture into a baking dish and top with grated cheddar cheese. Bake for 10-15 minutes until cheese is melted and bubbly.

Notes

For added spice, mix in chopped jalapeños or cayenne pepper. Serve with Mexican rice or a fresh salad for a complete meal. Broil for 2-3 minutes for a crispier cheese topping.
