  • 2 medium carrots (peeled and diced) Crispy and juicy, adds natural sweetness.
  • ½ head cauliflower (chopped into florets) Adds creamy texture when blended.
  • 3 ribs celery (sliced) Brings crunch and enhances aroma.
  • 2 cloves garlic (minced) Adds depth and warmth.
  • 14 oz canned lite coconut milk Provides velvety consistency.
  • 2 cups chicken broth Essential for a flavorful base.
  • 1 cup cooked chicken breast (shredded or diced) Provides protein and satisfaction.
  • ½ teaspoon salt (or to taste) Enhances flavors.
  • ½ teaspoon ground black pepper (or to taste) Adds warmth and spice.
  • 1 tablespoon lemon juice Brightens flavor and adds freshness.
  • ¼ teaspoon dried oregano (or more to taste) Complements other ingredients.
  • ¼ cup fresh herbs (chopped) Elevates flavor and color.

Method

Preparation
  1. In a ~3-quart pot, pour in the olive oil and heat over medium heat until it shimmers.
  2. Add the diced onion and diced carrots to the pot. Sauté for about 5 minutes until soft and slightly translucent.
  3. Stir in the chopped cauliflower florets, sliced celery, and minced garlic. Cook for an additional 2 minutes.
  4. Pour in the lite coconut milk and chicken broth, then add the shredded chicken, salt, and black pepper. Stir well and bring to a gentle boil.
  5. Once boiling, reduce the heat to low and simmer for about 10 minutes.
  6. Remove from heat. Stir in the fresh lemon juice, dried oregano, and chopped fresh herbs.
  7. Taste and adjust the seasoning with more salt, if necessary.
  8. Ladle the soup into bowls and enjoy.

Notes

For a smoother texture, use an immersion blender. Consider roasting the cauliflower for added depth. Fresh herbs can be substituted with thyme or rosemary.
