  • 3 cups chicken broth Comforting base for the soup.
  • 2 cups milk Adds creaminess and richness.
Main Ingredients
  • 1 head cauliflower Offers mild flavor and lovely texture.
  • 1-1/2 cups sweet corn Adds a pop of sweetness.
  • 8 oz freshly shredded sharp cheddar cheese Provides a satisfying sharpness.
Seasoning
  • to taste seasoned salt and pepper Boosts the soup's flavor profile.

Method

Preparation
  1. Melt the butter in a large soup pot over medium heat.
  2. Sauté sliced carrots, celery, and chopped shallot or onion with seasoned salt and pepper until tender, about 8-10 minutes, covering the pot halfway to speed up the process.
  3. Add pressed or minced garlic and sauté for about a minute until fragrant.
  4. Sprinkle in gluten-free flour, stirring constantly, and cook for 2 minutes.
  5. Gradually pour in chicken broth while stirring to avoid lumps. Add milk and turn heat to high until simmering.
  6. Once simmering, add chopped cauliflower and reduce heat to medium-low. Simmer until cauliflower is very tender, about 10-12 minutes.
Blending and Finishing
  1. Scoop about 2 cups of the soup into a blender and blend until smooth, cracking the lid slightly to allow steam escape.
  2. Pour the blended soup back into the pot, add sweet corn, and stir to combine.
  3. Turn off heat and add shredded cheddar cheese in batches, stirring until melted and smooth.
  4. Let the soup thicken for about 10 minutes before serving.

Notes

For an even creamier texture, use a combination of milk and heavy cream. Consider adding leftover vegetables for added nutrition. For a spice kick, add crushed red pepper flakes.
