Method
Preparation
- Melt the butter in a large soup pot over medium heat.
- Sauté sliced carrots, celery, and chopped shallot or onion with seasoned salt and pepper until tender, about 8-10 minutes, covering the pot halfway to speed up the process.
- Add pressed or minced garlic and sauté for about a minute until fragrant.
- Sprinkle in gluten-free flour, stirring constantly, and cook for 2 minutes.
- Gradually pour in chicken broth while stirring to avoid lumps. Add milk and turn heat to high until simmering.
- Once simmering, add chopped cauliflower and reduce heat to medium-low. Simmer until cauliflower is very tender, about 10-12 minutes.
Blending and Finishing
- Scoop about 2 cups of the soup into a blender and blend until smooth, cracking the lid slightly to allow steam escape.
- Pour the blended soup back into the pot, add sweet corn, and stir to combine.
- Turn off heat and add shredded cheddar cheese in batches, stirring until melted and smooth.
- Let the soup thicken for about 10 minutes before serving.
Notes
For an even creamier texture, use a combination of milk and heavy cream. Consider adding leftover vegetables for added nutrition. For a spice kick, add crushed red pepper flakes.
