Method
Preparation
- Preheat your oven to 400°F (205°C) and position one rack in the middle. Line a baking sheet with heavy-duty aluminum foil.
- Cut off a sliver from the stem end of each spaghetti squash for stability. Slice them down the center from top to bottom.
- Scoop out the seeds from each half using a soup spoon.
- Place the squash halves cut-side-up on the prepared baking sheet. Drizzle with olive oil, sprinkle with 1 teaspoon salt and ½ teaspoon pepper. Roast cut-side-down for 40 to 50 minutes.
Combining and Baking
- Once roasted, flip the squash over and cool until manageable. Use a fork to fluff the strands.
- Increase the oven temperature to 425°F (220°C).
- In a large bowl, combine the fluffed squash with marinara, ¾ teaspoon salt, ¼ teaspoon pepper, and chopped thyme. Adjust seasoning as needed.
- Transfer the mixture to a 9 x 13-inch baking dish. Top with shredded mozzarella and Parmigiano-Reggiano.
- Mix melted butter with panko breadcrumbs and sprinkle over the cheese layer.
- Bake for 25 to 30 minutes until the topping is golden. Garnish with thyme before serving.
Notes
Choose quality ingredients for the best flavor. Leftovers can be stored in the fridge for up to four days or frozen for three months. Add cooked ground turkey for extra protein.
