Method
Preparation
- Prepare your work area by greasing a 9×13 pan or lining it with parchment paper.
Melt the Butter and Marshmallows
- In a medium saucepan over medium-low heat, combine the butter and mini marshmallows. Stir constantly until melted into a smooth and creamy consistency.
Add the Rice Krispies
- Once melted, remove the pan from heat and stir in the Rice Krispies until well-coated. Press this mixture evenly into your prepared pan.
Prepare the Caramel Layer
- In a double boiler, combine the caramels, vanilla extract, and 1/4 cup of heavy cream. Stir until melted and smooth, approximately 10 minutes.
Pour Caramel
- Carefully pour the melted caramel over the Rice Krispie base and spread evenly. Refrigerate for about 5 minutes to set slightly.
Melt Chocolate
- In a microwave-safe bowl, combine the chocolate chips and remaining 1/4 cup of heavy cream. Microwave for about 1 minute, stirring every 30 seconds until melted and smooth.
Spread Chocolate
- Pour the melted chocolate over the caramel layer and spread evenly.
Add Toppings
- Sprinkle chopped pecans and additional chocolate chips while the chocolate is still warm. Drizzle any remaining caramel over the top.
Let it Set
- Place the pan back in the fridge to let everything set completely for 30-45 minutes. Once firm, cut into squares and serve.
Notes
Feel free to switch the chocolate chips with white chocolate or incorporate layers of peanut butter for variations. Store treats in an airtight container for up to one week or freeze for up to three months.
